• 2 large ripe bananas mashed(bit of speckling on them so a bit sweeter) • 2 large eggs • ½ cup melted almond butter, melted butter or peanut butter • 1/4 cup sugarless maple syrup, or 1/4 cup stevia • 1 tsp vanilla extract • 2 cups almond flour(or incorporate 1 scoop protein powder into the 2 cups for more protein) • 1 and a 1/2 tsp ground cinnamon/1/2 tsp nutmeg • 1 tsp baking powder • 1/2 tsp baking soda • ½ tsp sea salt • ⅔ cup dark chocolate chips (optional) • 1/2 cup crumbled walnuts (optional) • 1/4 cup of pumpkin seeds hulled(optional)
• Preheat the oven to 350 degrees Fahrenheit and line a loaf pan with parchment paper. • Mash the bananas in a mixing bowl until creamy. Mix in the peanut butter, eggs, sugarless maple syrup (dollarama Steve’s maple syrup is what I use), and vanilla extract until the wet ingredients are well mixed. • In a separate bowl, stir together the almond flour, baking powder, baking soda, cinnamon, nutmeg, protein if desired, and sea salt. Mix the dry ingredients into the bowl with the wet ingredients. Stir in the chocolate chips if desired. Adding a bunch of extra crumbled walnuts to the batter tastes amazing too! • Spread the prepared batter into the prepared loaf pan. • Top the batter with prepared walnuts and pumpkin seeds
• Bake on the center rack of the preheated oven for 40-45 minutes, or until the loaf is fully baked and the edges are golden brown. Use a toothpick to check center. if the toothpick comes out dry, that means its done. if not, put it back in oven and check in 4 min increments till toothpick comes out clean. All ovens are different so the bake time could be slightly different. Can even switch oven too broil after its baked, and let broil for 3-5minutes if you want a crunchier top!
If you really wanna increase the health meter on this delicious loaf, try adding a few drops of bilberry extract to the wet ingredients before mixing in the dry ingredients.
