Coconut flour no sugar brownie
Watchful observers will notice a section at the bottom is missing. Yes yes, I ate some before I took the picture. So what! It was delicious. I was already eating some when I was like, wait? maybe I should take a picture of it incase I ever needed to share it. This was before I made this site. Next time I make some, I’ll update this section with a better picture. But it may be a different variant though as I like crafting different food items to keep my skills fresh and my boredom in the kitchen at bay. I wish I could eat this screen. Anyhow enough poppycocking banter…RECIPE!……..NOW!
you’ll need:
• 6 tablespoons coconut flour
• 4 large eggs (room temperature better)
• 1/3 cup cacao powder
• 1/4 cup stevia and 2 tbsp extra stevia (purchase stevia)1 scoop protein powder of your choice (optional)
• 1/2 teaspoon salt
• 1tsp cinnamon
• 1 teaspoon vanilla extract
• 1/3 cup melted coconut oil (Purchase coconut oil) or butter
• 1/2 cup dark chocolate chips
• 1/4 cup Raw or roasted chopped or crushed cashews for topping
In a large bowl, combine the coconut flour, eggs, cacao powder, stevia, salt, cinnamon and protein powder if using. Stir well until no lumps remain.
Add in the melted coconut oil( or butter), vanilla, and stir again until the batter is smooth. Fold in the chocolate chips, if using. I recommend using them.
Pour the batter into the prepared pan and smooth the top with a spatula. Add cashews ontop of batter in the pan. Bake at 350ºF for 30 minutes, or until the center doesn't wiggle when you gently shake the pan and a toothpick comes out dry after poking it in the center.
